I have always been a firm believer that the fundamental unit of existence is the Story, and have often been approached about writing mine in articles or books. Let this blog be a part of that; a collection of thoughts, musings, information, and tales about the whisky and spirits industry during my time as head distiller in one of the most remote distilleries on the planet.

Wait, what? You mean I'm actually supposed to talk about me? Well, shit. Okay. 

After spending many years soul searching in the deepest, darkest, corners of the multiverse, and after a long and bumpy road, I landed back in Mexico with the idea of setting up an export business for mezcal brands. However, due to good parents and a natural thirst for knowledge, I wanted to learn what mezcal actually was before I started to simply sell it in the UK for a profit. So, instead of just dealing with commercial brands, I went to work and learn from mezcal producers. And that's where things took an interesting turn and I started my rather long fall down the proverbial rabbit hole. Many questions later, I travelled to Scotland to learn about the distilling process at the Institute of Brewing and Distilling, which of course led to way more questions and eventually to a MSc in Brewing and Distilling at Heriot-Watt University, and an award by the Worshipful Company of Distillers.

 

Now, I work as the Head Distiller at the world's northernmost distillery, where I get to explore my passion for making drinks and creating flavourful and aromatic experiences with a simple guideline:

"Do what you will, but keep it delicious".

A Blog and a Newsletter. 

Everything is made of Stories, this I believe above all else.

That said, whenever people approach me about writing mine in articles or books, I question if my stories are truly worth it. Sometimes I agree. There is some information or experiences that I wish to share, either to enrich the knowledge and experience of the reader or to serve as an account of past mistakes that I might reflect and learn from them. Perhaps others will learn from them too, or perhaps they will just be amused. Sometimes I don't agree. My stories are personal experiences, and I never have been one for sharing all of them openly. Although you might see me guiding tastings, tours, or speaking at forums, there are a lot of stories that I keep to myself. A duality of introvert and extrovert that, I imagine, a lot of us struggle with while others gladly dive into the spotlight or retreat into quietness. This (website) experiment is a compromise between both sides: I will share stories about my experience as distiller and whiskymaker because I want others to read and learn or discuss or reach out to me about similar topics, and I will write openly, with perhaps a bit too much of my personal point of view because I doubt many will read the stories anyway. A sort of writing therapy, out in public, to push the boundaries of what I am comfortable with.

 

So, the Blog is a collection of thoughts, tales, and information from one of the world's most remote distilleries and about the whisky and spirits industry in general. I have no schedule for writing post, nor am I crazy enough to think I could stick to one. However, I do promise (to myself, more than to you) to write at least once a month. 

And the Newsletter. This one should be fairly self-explanatory, yes? My first intention is to publish it every two months but, if there is enough content and enough time to write about it, it might change to a monthly letter or might slow down to a quarterly. Most likely it will bounce between those options, so expect it when you least expect it... as long as you have signed up for it. You can find the link to do that on the main page.
